  • 2 medium mangoes, diced approximately 1 cup
  • 1 cup shelled edamame, thawed (optional)
  • 1 cup diced strawberries approximately 9 ounces
  • 1 medium avocado, diced
  • 3 tablespoons finely diced red onion about one-half small onion
  • 1 medium jalapeño, seeded and finely diced
  • 1/4 cup thinly sliced basil leaves chiffonade
  • 3 tablespoons chopped cilantro
  • 1 tablespoon sesame oil (or neutral flavored oil)
  • 1 medium lime, zested
  • 1/4 cup lime juice about 1 lime
  • 1 teaspoon maple syrup (or to taste)
  • 1/4 teaspoon salt (or to taste)
  • Tortilla chips (for serving, optional)

Method
 

Preparation
  1. In a large bowl, mix the diced mangoes, edamame, strawberries, avocado, red onion, jalapeño, basil, and cilantro.
  2. In a small bowl, whisk together the sesame oil, lime zest, lime juice, maple syrup, and salt to taste to create the dressing.
  3. Pour the lime dressing over the salad and gently mix until fully incorporated.
  4. Serve with tortilla chips or on top of grilled meats; store leftovers in an airtight container in the fridge.

Notes

Choose ripe mangoes and avocados for the best flavor. Make the salsa right before serving for the freshest taste. Adjust lime juice and maple syrup to your preferred taste. Add more or less jalapeño depending on how spicy you like it.
