  • 1/4 cup honey
  • 1 large egg
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons dried culinary lavender flowers
  • 1/4 cup finely chopped almonds or walnuts optional

  • 2 tablespoons granulated sugar for topping
  • 1 teaspoon dried lavender for sprinkling

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and sugar until fluffy.
  3. Blend in honey, egg, and vanilla extract.
  4. In another bowl, whisk flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Gently fold in dried lavender and optional nuts.
Baking
  1. Scoop tablespoon-sized portions onto a lined baking sheet, spacing them apart.
  2. Sprinkle each cookie with granulated sugar and additional lavender.
  3. Bake for 12-15 minutes until golden.
  4. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

Store the cookies in an airtight container at room temperature. They will stay fresh for about a week. Reheat in the oven for a few minutes if desired.
