Preparation
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter and sugar until fluffy.
- Blend in honey, egg, and vanilla extract.
- In another bowl, whisk flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Gently fold in dried lavender and optional nuts.
Baking
- Scoop tablespoon-sized portions onto a lined baking sheet, spacing them apart.
- Sprinkle each cookie with granulated sugar and additional lavender.
- Bake for 12-15 minutes until golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Notes
Store the cookies in an airtight container at room temperature. They will stay fresh for about a week. Reheat in the oven for a few minutes if desired.
