Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, mix the mashed bananas, sugar, brown sugar, eggs, milk, oil, and vanilla until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the mini marshmallows, chocolate chips, and graham cracker crumbs.
Baking
- Divide batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
These muffins are great warm with butter or paired with a glass of milk. They can also be served with vanilla ice cream for dessert. Store in an airtight container at room temperature for up to three days or freeze individually for up to three months.
