Preparation
- In a heatproof bowl over a pot of simmering water, combine chocolate chips and water. Stir continuously until melted and smooth.
- Remove the bowl from heat and stir in vanilla until well combined. Let it cool to room temperature.
- In a separate large bowl, combine heavy whipping cream and granulated sugar. Beat with an electric mixer until soft peaks form.
- Fold about one-third of the whipped cream into the cooled chocolate mixture to lighten it.
- Carefully fold in the remaining whipped cream until smooth, ensuring not to deflate the mixture.
- Spoon the mousse into serving dishes or glasses.
- Chill for at least 1 hour, or until firm.
Serving
- Serve in individual cups, optionally topping with whipped cream and chocolate shavings or fresh berries.
Storage
- Store any leftovers in an airtight container in the refrigerator for up to three days. Do not freeze.
