Ingredients
  

For the mousse
  • 1 cup semisweet or bittersweet chocolate chips 175g
  • 2 tablespoons water for melting chocolate
  • 1 teaspoon pure vanilla extract
  • 1.25 cups heavy whipping cream 300ml
  • 2 tablespoons granulated sugar 25g
  • to taste whipped cream for garnish
  • to taste chocolate shavings for garnish

Method
 

Preparation
  1. In a heatproof bowl over a pot of simmering water, combine chocolate chips and water. Stir continuously until melted and smooth.
  2. Remove the bowl from heat and stir in vanilla until well combined. Let it cool to room temperature.
  3. In a separate large bowl, combine heavy whipping cream and granulated sugar. Beat with an electric mixer until soft peaks form.
  4. Fold about one-third of the whipped cream into the cooled chocolate mixture to lighten it.
  5. Carefully fold in the remaining whipped cream until smooth, ensuring not to deflate the mixture.
  6. Spoon the mousse into serving dishes or glasses.
  7. Chill for at least 1 hour, or until firm.
Serving
  1. Serve in individual cups, optionally topping with whipped cream and chocolate shavings or fresh berries.
Storage
  1. Store any leftovers in an airtight container in the refrigerator for up to three days. Do not freeze.

Ensure chocolate is fully melted and cooled for the best texture. Be gentle when folding in the whipped cream to maintain airiness. Experiment with different chocolate types for varied flavors.
