Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Clean the portobello mushrooms and remove the stems.
  3. Brush them with olive oil and place them on a baking sheet.
  4. Roast the mushrooms in the preheated oven for about 15-20 minutes until tender.
Cooking
  1. In a skillet over medium heat, add olive oil and sauté the sliced onion until translucent.
  2. Add minced garlic and cook for another minute.
  3. Stir in the vegetable broth, soy sauce, balsamic vinegar, thyme, salt, and pepper.
  4. Let it simmer for about 5-7 minutes.
Assembly
  1. Assemble the sandwiches by placing a roasted mushroom in each hoagie roll and drizzling with the au jus.
  2. Serve immediately, with extra au jus for dipping.

Notes

Store any leftover sandwiches in an airtight container in the fridge. To reheat, warm them in the oven or microwave until hot. Clean mushrooms well before roasting and feel free to add more veggies like peppers or spinach for extra nutrition. Adjust salt and pepper to fit your taste. Use different kinds of rolls if you prefer.
