  • 8 oz pasta of your choice
  • 1 cup ricotta cheese
  • 2 cups fresh tomatoes, chopped Use ripe tomatoes for the best flavor.
  • 2 tbsp olive oil For sautéing.
  • 2 cloves garlic, minced
  • 1 cup fresh basil, torn For garnish.
  • to taste salt
  • to taste pepper
  • 1/4 cup parmesan cheese, grated (optional) For serving.

Method
 

Cooking the Pasta
  1. Cook the pasta according to package instructions. Drain and set aside.
Making the Sauce
  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  2. Add chopped fresh tomatoes to the skillet and cook until they begin to soften.
  3. Stir in the ricotta cheese, salt, and pepper, mixing until well combined.
Combining Ingredients
  1. Add the cooked pasta to the skillet and toss to coat. Adjust seasoning as needed.
Serving
  1. Serve hot, garnished with fresh basil and grated parmesan cheese if desired.

Notes

For a creamier sauce, add a splash of pasta water when mixing. Consider adding vegetables like spinach or zucchini for extra nutrition.
