  • 2 cups mashed sweet potatoes
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 pieces eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) Optional nuts for added texture.
Topping
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Stir in the mashed sweet potatoes.
  5. In another bowl, mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the sweet potato mixture, mixing until just combined.
  7. If using, fold in the nuts.
  8. Pour the batter into the prepared loaf pan.
Topping and Baking
  1. In a small bowl, mix the topping sugar and cinnamon, and sprinkle it over the batter.
  2. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool before slicing.

Notes

Store sweet potato bread in an airtight container at room temperature for up to three days. For longer storage, wrap tightly and place in the fridge or freezer. To reheat, slice and warm in the microwave or toaster. You can serve it plain, with butter, or with cream cheese.
