Preparation
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
- Melt the butter in a saucepan over medium heat, then stir in the brown sugar until dissolved. Pour this mixture into the prepared cake pan.
- Arrange the halved strawberries on the brown sugar mixture, cut side up.
Cake Batter
- In a mixing bowl, cream the granulated sugar and remaining butter until fluffy.
- Beat in the eggs one at a time, then stir in the vanilla.
- Combine the flour, baking powder, and salt in another bowl. Gradually add to the creamed mixture alternately with the milk, beginning and ending with the flour mixture.
- Pour the batter over the strawberries in the pan.
Baking
- Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for 10 minutes, then invert onto a serving plate.
Notes
Serve this cake warm with a scoop of ice cream or a dollop of whipped cream. It can also be enjoyed with a cup of tea or coffee. Store any leftover cake in an airtight container in the fridge. It will stay fresh for about three days. To reheat, warm it in the microwave for a few seconds.
