Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream the softened butter and sugar together until light and fluffy.

- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the crushed freeze-dried strawberries.
Baking
- Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store the cookies in an airtight container at room temperature for up to a week. Freeze for up to three months. Add a pinch of lemon zest for more flavor or try different freeze-dried fruits for a unique twist.
