Ingredients
  

For the Topping
  • 1/2 cup old fashioned oats
  • 1/2 cup brown sugar
  • 2/3 cup flour
  • 1/3 cup salted butter (melted)
  • 1/2 teaspoon cinnamon
For the Filling
  • 2 1/2 cups peaches (peeled and sliced, about 3 peaches)
  • 1 cup sliced strawberries
  • 1/4 cup brown sugar
  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Mix the oatmeal, brown sugar, flour, cinnamon, and melted butter until the mixture is crumbly.
  2. Spread half the topping mixture into the bottom of a greased 9x9 pan.
  3. Top the crust with the diced peaches and strawberries.
  4. In a small saucepan, cook brown sugar, cornstarch, salt, and water over medium-high heat until thickened.
  5. Stir in the vanilla and pour the syrup over the fruit.
  6. Sprinkle the remainder of the topping mixture over the fruit.
Baking
  1. Bake at 350°F (175°C) for 35 minutes.
  2. OPTIONAL: Turn the oven to broil and place on the top shelf. Broil for 2-3 minutes, watching closely to prevent burning.

Notes

Serve warm with vanilla ice cream, whipped cream, or plain. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
