Ingredients
  

Cookie Dough
  • 1 cup butter, softened Make sure it's at room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup strawberries, chopped Use fresh strawberries for best flavor
Cheesecake Filling
  • 8 ounces cream cheese, softened Make sure it's at room temperature
  • 1/2 cup powdered sugar

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, mix the flour, baking powder, and salt. Gradually add this to the creamed mixture until well blended.
  5. Fold in the chopped strawberries.
  6. For the cheesecake filling, mix the softened cream cheese and powdered sugar until smooth.
Assembly
  1. Take a tablespoon of cookie dough, flatten it, and place a small amount of cheesecake filling in the center. Enclose it and roll into a ball.
  2. Place the cookies on a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve these cookies warm or at room temperature. They pair well with ice cream or whipped cream. Store cookies in an airtight container at room temperature for up to a week or in the fridge for up to two weeks.
