Ingredients
  

Oats Base
  • 1 cup old fashioned oats Use gluten-free oats if necessary.
  • 2 tbsp chia seeds
  • 2 tbsp vegan vanilla protein powder Optional ingredient.
  • 1.5 cups dairy-free milk Can use unsweetened soy milk, almond milk, or oat milk.
  • 1-2 tbsp pure maple syrup Adjust to taste.
  • 0.25 tsp pure vanilla extract
Strawberry Layer
  • 1.25 cups frozen strawberries Can substitute fresh strawberries.
  • 5 oz dairy-free yogurt Use your preferred flavor.

Method
 

Preparation of Oats
  1. In a large bowl, combine the oats, chia seeds, and protein powder (if using). Whisk to combine.
  2. Stir in the dairy-free milk, 1 tablespoon of maple syrup, and vanilla extract.
  3. Cover and place in the fridge to thicken for about 2-3 hours.
Microwaving Strawberries
  1. Add the frozen strawberries to a microwave-safe bowl and microwave on high for 2 minutes.
  2. Cut the berries into smaller, bite-sized pieces and microwave for another 2-3 minutes, stopping every 30 seconds, until bubbling and reduced.
  3. Add 1 tablespoon of maple syrup if needed.
  4. Cover and place in the fridge until ready to assemble.
Assembly
  1. Spoon 2-3 tablespoons of the thickened oats into a jar.
  2. Layer on a spoonful of strawberries and top with more oats.
  3. Add a spoonful of dairy-free yogurt on top. Repeat with remaining ingredients.

Notes

These oats can be enjoyed straight from the jar or topped with extra fresh fruits or nuts for added texture. Store in an airtight jar in the fridge for up to 5 days.
