Preparation
  1. In a bowl, mix gochujang, honey, soy sauce, minced garlic, grated ginger, and sesame oil to make the marinade.
  2. Add chicken thighs to the marinade, ensuring they are well coated.
  3. Allow the chicken to marinate for at least 30 minutes.
Cooking
  1. Preheat the oven to 400°F (200°C).
  2. Place the marinated chicken on a baking sheet and roast in the oven for 25-30 minutes, or until the chicken is cooked through and caramelized.
Serving
  1. Serve the chicken over cooked rice.

Notes

For extra flavor, marinate the chicken overnight. Try adding sesame seeds on top before serving for a bit of crunch. This recipe can also work with chicken breasts for a leaner option. For a different texture, grill the chicken instead of roasting it. Store leftovers in an airtight container in the refrigerator for up to three days.
