Preparation
- Cook the rice noodles according to the package instructions and drain.
- In a large bowl, whisk together peanut butter, soy sauce, sesame oil, sriracha, minced garlic, lime juice, and maple syrup until smooth.
- Add the cooked noodles to the bowl and toss until evenly coated with the sauce.
Serving
- Serve immediately, garnished with chopped green onions and peanuts.
Notes
Store any leftover noodles in an airtight container in the fridge for about 3 days. To reheat, add a little water and warm them in the microwave or on the stovetop.
