  • 8 oz rice noodles Use your preferred type of rice noodles.
Peanut Sauce
  • 1/4 cup creamy peanut butter Use crunchy peanut butter for added texture if desired.
  • 2 tablespoons soy sauce Ensure gluten-free for a vegan recipe.
  • 1 tablespoon sesame oil For depth of flavor.
  • 1 tablespoon sriracha Adjust based on spice preference.
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice Fresh lime preferred.
  • 1 tablespoon maple syrup Can substitute honey if not vegan.
Garnish
  • to taste Chopped green onions For garnishing.
  • to taste Chopped peanuts For garnishing.

Method
 

Preparation
  1. Cook the rice noodles according to the package instructions and drain.
  2. In a large bowl, whisk together peanut butter, soy sauce, sesame oil, sriracha, minced garlic, lime juice, and maple syrup until smooth.
  3. Add the cooked noodles to the bowl and toss until evenly coated with the sauce.
Serving
  1. Serve immediately, garnished with chopped green onions and peanuts.

Notes

Store any leftover noodles in an airtight container in the fridge for about 3 days. To reheat, add a little water and warm them in the microwave or on the stovetop.
