  • 1 lb ground beef You can substitute with ground turkey or chicken for a lighter option.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained
  • 2 cups beef broth
  • 1 tbsp chili powder Adjust to taste for spice level.
  • 1 tsp cumin

Method
 

Cooking
  1. In a large pot, brown the ground beef over medium heat. Drain excess fat.
  2. Add chopped onion and minced garlic, cooking until the onion is soft.
  3. Stir in the diced tomatoes, kidney beans, beef broth, chili powder, and cumin.
  4. Bring the mixture to a simmer, then reduce heat and let it cook for 20 minutes.
  5. Season with salt and pepper according to taste before serving.

Notes

This dish can be served on its own or with cornbread, topped with shredded cheese and sour cream for extra flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
