  • 2 pounds boneless skinless chicken thighs, cut into 1 inch pieces For tenderness and flavor.
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) tomato sauce
  • 1 can (13.5 ounces) full fat coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Combine the chopped chicken, onion, minced garlic, grated ginger, diced tomatoes, tomato sauce, coconut milk, curry powder, cumin, turmeric, salt, and pepper in your slow cooker.
  2. Stir everything well to combine.
  3. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until the chicken is cooked through and tender.
Serving
  1. Serve hot over a bed of fluffy rice.
  2. Pair it with naan or flatbread for a delightful meal.
  3. Add a sprinkle of fresh cilantro for extra flavor.

Notes

Cut chicken into even pieces for even cooking. Adjust spices to your taste, adding more curry powder if desired.
