  • 1 cup pineapple chunks (fresh or canned) Canned pineapple should be drained if in syrup.
  • 1/2 cup soy sauce Low-sodium soy sauce can be used for a lighter option.
  • 1/4 cup brown sugar
  • 1 tablespoon garlic (minced) Fresh minced garlic adds the best flavor.
  • 1 teaspoon ginger (grated) Fresh ginger is preferred for a stronger taste.

Method
 

Preparation
  1. Place the pork loin in the slow cooker.
  2. In a bowl, mix together the pineapple chunks, soy sauce, brown sugar, minced garlic, and grated ginger.
  3. Pour the mixture over the pork loin.
Cooking
  1. Cover and cook on low for 6-8 hours or until the pork is tender.
  2. Remove the pork, let it rest for a few minutes, then slice and serve with the sauce.

Notes

For extra flavor, brown the pork loin before adding it to the slow cooker. You can also marinate the pork in the sauce overnight.
