- In a slow cooker, combine the chicken, sausage, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, Cajun seasoning, bay leaf, and okra if using.
- Stir to combine and season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 4 hours.
- Remove bay leaf before serving.
- Serve gumbo over cooked rice and garnish with chopped green onions.
Notes
Feel free to adjust the spices to suit your taste. If you want more veggies, add carrots or corn. For a thicker gumbo, let it cook uncovered for the last hour. You can make it a day ahead; the flavors will develop even more! Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
