  • 1 pound ground beef Use lean ground beef for a healthier option
  • 4 medium potatoes, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 cup shredded cheese (cheddar or your choice) Top with extra cheese for added flavor
  • 1 can (28 oz) diced tomatoes with sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder For a spicy kick, add jalapeƱos or hot sauce
  • to taste Salt and pepper

Method
 

Preparation
  1. In a slow cooker, combine the ground beef, diced potatoes, kidney beans, corn, cheese, diced tomatoes, onion, garlic, chili powder, salt, and pepper.
  2. Stir well to combine.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the beef is cooked through.

Notes

To store leftovers, place them in an airtight container and keep them in the refrigerator for 3-4 days. You can also freeze leftovers in an airtight container for up to 3 months.
