Ingredients
  

Chili Base
  • 1 pound lean chicken, diced
  • 2 units sweet potatoes, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
Spices
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. In a slow cooker, combine the diced chicken, sweet potatoes, black beans, kidney beans, diced tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper.
  2. Stir to mix all the ingredients well.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and the sweet potatoes are tender.
  2. Serve hot, garnished with your favorite toppings such as cilantro, sour cream, or avocado.

Notes

For a spicier chili, add diced jalapeƱos or extra chili powder. You can substitute chicken with turkey for a lighter option. To thicken the chili, mash some sweet potatoes in the pot before serving. Consider adding lime juice or zest for a refreshing twist.
