  • 3 lbs beef chuck roast Use a good quality chuck roast for best results.
  • Salt and pepper to taste Salt and pepper to taste Adjust seasoning according to preference.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/2 cup beef broth
  • 1/4 cup lime juice Freshly squeezed lime juice is recommended.
  • 2 leaves bay leaves

Method
 

Preparation
  1. Season the beef chuck roast with salt and pepper on all sides.
  2. Place the seasoned beef in the slow cooker.
  3. Add the chopped onion and minced garlic on top of the beef.
  4. Sprinkle the cumin, oregano, and chili powder over the ingredients.
  5. Pour in the beef broth and lime juice, then add the bay leaves.
Cooking
  1. Cover and cook on low for 8 hours or high for 4 hours until the beef is tender.
  2. Once cooked, shred the beef with two forks and mix it with the juices.

Notes

For best results, sear the beef before placing it in the slow cooker. Serve in tacos with toppings like cilantro and avocado. Store leftovers in an airtight container for up to 4 days, or freeze for longer storage. Reheat on the stove or microwave until heated through.
