  • 3-4 lbs chuck roast
  • 2 cups fresh or frozen cranberries Fresh cranberries provide a brighter flavor.
  • 1 cup balsamic vinegar
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish Optional, for garnish.

Method
 

Preparation
  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large oven-safe pot over medium-high heat. Season the chuck roast with salt and pepper, then sear it in the pot until browned on all sides.
  3. Remove the roast and set aside. In the same pot, add the chopped onion and garlic, cooking until softened.
  4. Stir in the cranberries and balsamic vinegar, and scrape up any browned bits from the pot.
  5. Return the roast to the pot, then add the beef broth.
  6. Cover the pot and transfer it to the oven. Cook for 3-4 hours, or until the meat is fork-tender.
  7. Remove from the oven and let it rest for a few minutes. Slice and serve with the glaze spooned over the beef. Garnish with fresh herbs if desired.

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, simply warm in the oven or on the stovetop. This dish can also be frozen for up to 3 months.
