  • 4 chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1 cup orange juice Freshly squeezed is preferred.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 onion, sliced Medium-sized onion.
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional) Adds extra flavor.

Method

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken breasts with salt and pepper and add them to the skillet. Cook until browned on both sides, about 6-7 minutes per side.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add the sliced onion and garlic, and sauté until softened.
  5. Add the cranberries and orange juice to the skillet and stir to combine.
  6. Return the chicken to the skillet, cover, and simmer for about 10-15 minutes, or until the chicken is cooked through.
  7. Garnish with fresh thyme, if desired, and serve.

Notes

Serve with rice or quinoa to soak up the sauce. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat, adding a splash of orange juice to keep it moist.
