  • 6 tomatillos, husked and halved
  • 2 peaches, pitted and diced Use fresh peaches for best flavor.
  • 2 jalapeños, halved and seeded Adjust based on desired heat level.
  • 1/2 small onion diced
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • to taste salt

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Place the halved tomatillos and jalapeños on a baking sheet.
  3. Roast in the oven for 15-20 minutes until slightly charred and soft.
  4. Remove from the oven and let cool slightly.
  5. In a blender or food processor, combine the roasted tomatillos, jalapeños, diced peaches, onion, garlic, cilantro, lime juice, and salt.
  6. Blend until desired consistency is reached.
Serving
  1. Serve fresh as an appetizer with chips or as a topping for grilled chicken, fish, or tacos.

Notes

Let the salsa sit for at least 30 minutes after blending; the flavors will meld beautifully. Store leftovers in an airtight container in the fridge for 3-5 days. Heat gently on the stove if desired.
