Preparation
- Preheat your oven's broiler.
- Place the tomatillos, peaches, onion, garlic, and jalapeños on a baking sheet.
- Broil for about 5-7 minutes, turning occasionally, until they are charred and softened.
- Remove from the oven and let cool slightly.
- In a blender or food processor, combine the roasted ingredients, cilantro, lime juice, and salt.
- Blend until desired consistency is reached, smooth or chunky.
- Taste and adjust seasoning if necessary.
Serving
- Serve with tortilla chips, or use as a topping for tacos, chicken, fish, shrimp, or rice.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a saucepan over low heat, stirring occasionally. Choose ripe peaches and tomatillos for the best flavor. Adjust jalapeño based on spice preference.
