  • 4 ripe tomatillos, husked and rinsed
  • 2 ripe peaches, pitted and quartered
  • 1 small onion, quartered
  • 2 cloves garlic
  • 1-2 peppers jalapeño, to taste
  • 0.5 cup fresh cilantro, chopped
  • 1 lime Juice of 1 lime
  • Salt to taste

Method
 

Preparation
  1. Preheat your oven's broiler.
  2. Place the tomatillos, peaches, onion, garlic, and jalapeños on a baking sheet.
  3. Broil for about 5-7 minutes, turning occasionally, until they are charred and softened.
  4. Remove from the oven and let cool slightly.
  5. In a blender or food processor, combine the roasted ingredients, cilantro, lime juice, and salt.
  6. Blend until desired consistency is reached, smooth or chunky.
  7. Taste and adjust seasoning if necessary.
Serving
  1. Serve with tortilla chips, or use as a topping for tacos, chicken, fish, shrimp, or rice.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a saucepan over low heat, stirring occasionally. Choose ripe peaches and tomatillos for the best flavor. Adjust jalapeño based on spice preference.
