Ingredients
  

For the roasted florets
  • 4 cups Florets (e.g., cauliflower, broccoli) Choose your favorite types of florets.
  • 2 tablespoons Olive oil Ensure even coating for better caramelization.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For the honey-lemon dressing
  • 3 tablespoons Honey Adjust the amount to taste.
  • 2 tablespoons Lemon juice Freshly squeezed is best.
For the topping
  • 1/4 cup Pomegranate seeds
  • 1/4 cup Chopped hazelnuts Can substitute with other nuts if desired.
  • 2 tablespoons Chopped parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the florets with olive oil, salt, and pepper until evenly coated.
Roasting
  1. Spread the florets on a baking sheet and roast for 20-30 minutes, or until caramelized.
Making the Dressing
  1. In a small bowl, whisk together honey and lemon juice to create the dressing.
Serving
  1. Once the florets are done, remove from the oven and drizzle with the honey-lemon dressing.
  2. Top with pomegranate seeds, chopped hazelnuts, and parsley before serving.

Notes

Store leftovers in an airtight container in the fridge. They can be reheated in the oven or microwave. Adding a splash of lemon juice before serving again can help freshen their flavor.
