  • 1 box (3.4 oz) instant vanilla pudding mix
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup water
  • ½ cup unsalted butter, melted For drizzling on top.
  • 1 tsp vanilla extract
  • ½ tsp cinnamon Optional for added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Prepare the rhubarb by chopping it into small pieces and spreading it evenly in the baking dish.
  3. Sprinkle sugar over the rhubarb, ensuring it’s evenly coated.
Assembly
  1. Mix the pudding with water and vanilla extract, then pour it over the rhubarb.
  2. Sprinkle the cake mix evenly over the top, followed by the melted butter.
Baking
  1. Bake for 40–45 minutes until the top is golden and the rhubarb is bubbly.
  2. Let it cool slightly before serving—this recipe rhubarb dump cake is best enjoyed warm with a scoop of vanilla ice cream.
