Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup milk
Filling and Topping
  • 1 1/2 cups fresh raspberries Make sure to use fresh raspberries for the best flavor.
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the dry ingredients: 2 cups flour, 1 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  3. In another bowl, combine melted butter, 1 large egg, 1 teaspoon vanilla extract, and 3/4 cup milk. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the fresh raspberries.
Streusel Topping
  1. For the streusel topping, mix together 1/2 cup brown sugar, 1/2 cup oats, 1/4 cup flour, and 1/2 teaspoon cinnamon in a bowl.
  2. Add melted butter and combine until crumbly.
Baking
  1. Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Sprinkle the streusel topping evenly over each muffin.
  3. Bake for 18-20 minutes or until a toothpick comes out clean.
  4. Let them cool slightly before serving. Enjoy!

Notes

These muffins are delightful served warm, alongside a cup of coffee or tea. You can also serve them with a dollop of whipped cream or a scoop of vanilla ice cream for a special treat.
