Preparation
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, whisk together the dry ingredients: 2 cups flour, 1 cup sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt.
- In another bowl, combine melted butter, 1 large egg, 1 teaspoon vanilla extract, and 3/4 cup milk. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the fresh raspberries.
Streusel Topping
- For the streusel topping, mix together 1/2 cup brown sugar, 1/2 cup oats, 1/4 cup flour, and 1/2 teaspoon cinnamon in a bowl.
- Add melted butter and combine until crumbly.
Baking
- Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle the streusel topping evenly over each muffin.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let them cool slightly before serving. Enjoy!
