  • 1 can crushed pineapple (20 oz) Use with juice
  • 1 box cake mix (yellow or white) Can substitute with coconut cake mix for richer flavor
  • 1/2 cup butter (1 stick) Slice evenly for topping
  • 1 cup cherries (optional) For topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Pour the crushed pineapple (with juice) into a 9×13 inch baking dish.
  3. Sprinkle the dry cake mix evenly over the pineapple.
  4. Slice the butter and place the slices evenly on top of the cake mix.
  5. If using, add cherries on top.
Baking
  1. Bake for approximately 30-40 minutes or until the top is golden brown.
Serving
  1. Serve warm with a scoop of ice cream.

Notes

Best served warm. Store leftovers in an airtight container in the refrigerator. Reheat in the microwave or oven as needed. Can make ahead of time.
