  • 1 can diced tomatoes Choose regular or seasoned diced tomatoes.
  • 1 can black beans Rinse and drain before using.
  • 1 cup corn Fresh or frozen corn can be used.
  • 1 teaspoon cumin Adjust seasoning to taste.
  • to taste Salt and pepper Add to your preference.
  • 2 cups water Use vegetable broth for extra flavor.

Cooking Instructions
  1. In a large pot, combine the rice, diced tomatoes, black beans, corn, cumin, and water.
  2. Stir everything together and bring it to a boil.
  3. Once it boils, reduce the heat to low and cover the pot.
  4. Let it simmer for about 20 minutes or until the rice is cooked through.
  5. Season with salt and pepper to taste before serving.

Notes

For extra flavor, consider adding some chopped onions and garlic when cooking. Feel free to substitute other beans or vegetables based on what you have available. If you want a spicy kick, add some diced jalapeƱos or chili powder.
