Ingredients
  

Filling
  • 2 pieces large sweet potatoes Peeled and cubed
  • 1 cup pecans Chopped
  • 1/2 cup maple syrup For natural sweetness
  • 1/4 cup brown sugar
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil until tender. Drain and mash.
  3. In a mixing bowl, combine the mashed sweet potatoes, maple syrup, brown sugar, melted butter, vanilla extract, cinnamon, salt, and eggs. Mix until well combined.
  4. Pour the mixture into a greased pie dish.
  5. Chop the pecans and sprinkle them on top of the sweet potato mixture.
Baking
  1. Bake in the preheated oven for 30-35 minutes, until the filling is set.
  2. Let cool before serving.

Notes

Serve warm or at room temperature with whipped cream or vanilla ice cream. Store covered in the refrigerator for up to 3 days.
