  • 3 whole ripe bananas, mashed Make sure they are very ripe for maximum sweetness.
  • 1/2 cup peanut butter Can substitute with almond butter for a different flavor.
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1/2 cup yogurt or applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups flour You can substitute half with whole wheat flour for a healthier option.
  • 1/2 cup chocolate chips Feel free to add more for a richer flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix the mashed bananas and peanut butter together until well combined.
  3. Stir in the sugars, yogurt (or applesauce), and vanilla extract. Mix until smooth.
  4. Add the baking soda and salt, and stir to combine.
  5. Gradually fold in the flour until just combined, then gently fold in the chocolate chips.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

To store, wrap the bread in plastic wrap or store it in an airtight container at room temperature for 3-4 days. For longer storage, freeze it for up to three months, slicing beforehand for easy thawing.
