Preparation
- Line a large baking sheet with parchment paper or a silicone baking mat and lightly grease it.
- Measure all ingredients before cooking, as timing is critical.
Cooking
- In a microwave-safe bowl, combine the sugar and corn syrup, stir until mixed.
- Microwave on high for 4 minutes, then stir. Microwave for an additional 3-4 minutes until the mixture turns a golden amber color.
- Carefully stir in the peanuts and microwave for another 1-2 minutes until the mixture reaches a deep golden color.
- Quickly add baking soda, butter, and vanilla if using, then stir to combine.
- Immediately pour the mixture onto the prepared baking sheet and spread as thin as possible.
- Allow to cool at room temperature for 30-45 minutes until hardened.
Serving
- Break into pieces of desired size and serve or store.
Notes
Store in an airtight container at room temperature for up to 2 weeks. Avoid refrigeration as moisture causes the brittle to become sticky.
