  • 1 cup granulated white sugar
  • ½ cup light corn syrup
  • 1 cup dry roasted peanuts salted or unsalted, based on preference
  • 1 teaspoon baking soda optional, for extra airiness
  • 1 teaspoon butter optional, for added richness
  • ½ teaspoon vanilla extract optional

Method
 

Preparation
  1. Line a large baking sheet with parchment paper or a silicone baking mat and lightly grease it.
  2. Measure all ingredients before cooking, as timing is critical.
Cooking
  1. In a microwave-safe bowl, combine the sugar and corn syrup, stir until mixed.
  2. Microwave on high for 4 minutes, then stir. Microwave for an additional 3-4 minutes until the mixture turns a golden amber color.
  3. Carefully stir in the peanuts and microwave for another 1-2 minutes until the mixture reaches a deep golden color.
  4. Quickly add baking soda, butter, and vanilla if using, then stir to combine.
  5. Immediately pour the mixture onto the prepared baking sheet and spread as thin as possible.
  6. Allow to cool at room temperature for 30-45 minutes until hardened.
Serving
  1. Break into pieces of desired size and serve or store.

Notes

Store in an airtight container at room temperature for up to 2 weeks. Avoid refrigeration as moisture causes the brittle to become sticky.
