Parmesan Crusted Chicken Sheet Pan Dinner

Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese Use freshly grated for the best flavor.
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional) Can substitute with oregano and basil.
For the Veggies
  • 2 cups baby potatoes, halved
  • 2 cups green beans, trimmed

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the halved potatoes with 2 tablespoons of olive oil, salt, pepper, and Italian seasoning. Spread them on a sheet pan.
  3. In another bowl, mix the Parmesan cheese with the remaining olive oil, garlic, salt, and pepper.
  4. Dip each chicken breast into the Parmesan mixture until well coated and place on the sheet pan alongside the potatoes.
Cooking
  1. Roast in the oven for 15 minutes.
  2. After 15 minutes, add the green beans to the sheet pan and return it to the oven for another 15-20 minutes, or until the chicken is cooked through and the potatoes are fork-tender.

Notes

Serve with a light salad or crusty bread. For extra flavor, sprinkle additional Parmesan on top.
