  • 6 pieces croissants, torn into pieces Use day-old croissants for best results.
  • 6 large eggs
  • 2 cups milk
  • 1 cup shredded cheese (cheddar or your choice) You can use different types of cheese.
  • 1 cup diced ham or cooked bacon For a vegetarian version, skip ham.
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • to taste Salt
  • to taste Pepper
  • as needed Butter or oil for greasing the baking dish

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a baking dish with butter or oil.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Layer torn croissant pieces in the baking dish. Sprinkle with cheese, ham, bell peppers, and green onions.
  4. Pour the egg mixture evenly over the croissant layers.
  5. Cover with plastic wrap and refrigerate overnight.
Baking
  1. In the morning, remove from the refrigerator and let sit for 10-15 minutes.
  2. Bake for 30-40 minutes, or until the casserole is set and golden brown on top.
  3. Let cool slightly before serving.

Notes

Cut into squares and serve warm. Add fruit or salad on the side, and offer ketchup, hot sauce, or sour cream as options. Pairs well with coffee or orange juice. Store cooled casserole in the refrigerator for up to 3 days.
