One Pot Meatball Pasta

Ingredients
  

For the Meatballs
  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1/2 cup breadcrumbs Crushed crackers or oats can be used as an alternative.
  • 1/4 cup grated Parmesan cheese Can add more for richer flavor.
  • 1 each egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste pepper
For the Pasta
  • 2 tablespoons olive oil
  • 1 each onion, chopped
  • 1 can (28 ounces) crushed tomatoes Fresh tomatoes can be used but may need added water.
  • 2 cups pasta (like penne or rotini) Experiment with different pasta shapes to change it up.
  • 2 cups chicken or vegetable broth
  • to taste Fresh basil for garnish

Method
 

Preparation
  1. In a bowl, mix ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Form mixture into mini meatballs.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened.
Cooking
  1. Add meatballs to the pot and brown on all sides.
  2. Pour in crushed tomatoes and broth, then bring to a simmer.
  3. Add pasta and cook according to package instructions until al dente.
  4. Serve hot, garnished with fresh basil.

Notes

This dish goes well with a fresh salad or some garlic bread. You can also top it with extra Parmesan cheese for a richer flavor. Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm in the microwave or on the stovetop, adding a little water if too thick.
