  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cups vegetable broth Can substitute with chicken broth.
  • 1 cup shredded cheddar cheese Feel free to use other cheeses for different flavors.
  • 1/2 cup heavy cream
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat.
  2. Add the orzo and garlic powder, and stir for about 1 minute.
  3. Pour in the vegetable broth and bring to a boil.
  4. Add the broccoli florets and reduce the heat to a simmer.
  5. Cook for about 10-12 minutes until the orzo is tender and most of the liquid is absorbed.
  6. Stir in the heavy cream and shredded cheddar cheese until melted and creamy.
  7. Season with salt and pepper to taste.
  8. Serve warm.

Notes

Feel free to add other vegetables like carrots or peas for added nutrition. For extra cheesiness, add more cheese. Add red pepper flakes for spice.
