No-Bake Pecan Pie Bites

Ingredients
  

Main Ingredients
  • 1 cup pecans
  • 1 cup pitted dates (soaked) Soak for easier blending
  • 2 tbsp coconut sugar or monk fruit Adjust sweetness as desired
  • 1 pinch sea salt Optional, for enhancing flavor
  • 1 tsp vanilla
  • 1 tsp cinnamon (optional) For added flavor
  • 1 1/4 cup chocolate chips For dipping

Method
 

Preparation
  1. Add all ingredients except chocolate chips to a food processor and blend until a sticky dough forms.
  2. Roll the mixture into balls and place them on a lined cookie sheet. Slightly flatten each ball with your palm.
  3. Freeze the bites for about 15 minutes to firm up.
  4. Melt the chocolate chips until smooth.
  5. Dip each bite into melted chocolate and return to the cookie sheet. Top with a pecan.
  6. Freeze again until the chocolate hardens.

Notes

Store in an airtight container in the freezer. Can be enjoyed straight from the freezer or after sitting out for a few minutes to soften. Lasts for up to one month.
