Preparation
- In a mixing bowl, combine the granola, peanut butter, honey (or maple syrup), and salt. Stir until well combined.
- If using, fold in chocolate chips and dried fruit.
- Line a muffin tin with paper liners or grease it lightly.
- Spoon the mixture into the muffin tin, pressing down firmly to compact.
- Refrigerate for at least 30 minutes until set.
- Remove from the tin and enjoy!
Notes
Store the granola cups in an airtight container in the fridge for up to a week. For longer storage, freeze them. Feel free to add extra nuts or seeds for more crunch.
