Ingredients
  

For the crust
  • 24 pieces gluten-free Oreo cookies Use regular Oreos if gluten is not a concern.
  • 1/2 cup Vegan butter, melted
For the filling
  • 8 ounces Dairy-free cream cheese, at room temperature Can be substituted with different types of dairy-free cream cheese.
  • 1/2 cup Coconut milk or almond milk
  • 1/2 cup Powdered sugar
  • optional Vegan chocolate for drizzling

Method
 

Preparation
  1. In a food processor, crush the Oreo cookies until fine.
  2. In a mixing bowl, combine the crushed cookies with melted vegan butter and mix until well combined.
  3. Press the cookie mixture into the bottom of a pie dish to form the crust.
  4. In another bowl, mix the dairy-free cream cheese, coconut milk, and powdered sugar until smooth.
  5. Pour the cream cheese mixture over the cookie crust and smooth it out.
  6. Chill the pie in the refrigerator for at least 2 hours until set.
  7. Optional: drizzle melted vegan chocolate on top before serving.

Notes

Serve this pie chilled for a refreshing dessert. It pairs well with fresh berries or whipped coconut cream for an extra treat.
