  • 2 cups cooked rice Day-old rice is recommended for best texture.
  • 1 can Spam, diced Can be replaced with chicken or tofu for a different protein.
  • 1 cup mixed vegetables (carrots, peas, corn) Feel free to switch up the vegetables based on your preference.
Seasonings
  • 2 tablespoons soy sauce Adjust to taste; can substitute with gluten-free soy sauce.
  • 1 tablespoon sesame oil For cooking the Spam.
  • 2 tablespoons green onions, sliced To be added at the end for garnish.
  • to taste Salt and pepper

Method
 

Cooking
  1. Heat sesame oil in a large skillet over medium heat.
  2. Add diced Spam and cook until browned.
  3. Stir in the mixed vegetables and cook until tender.
  4. Add the cooked rice and soy sauce, and stir to combine.
  5. Cook for an additional 5 minutes, stirring frequently.
  6. Add sliced green onions and season with salt and pepper.
  7. Serve hot and enjoy!

Notes

Store any leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or on the stovetop, adding a small amount of water to keep it moist. For serving, consider adding a fried egg on top or a side of salad.
