Ingredients
  

Main Ingredients
  • 2 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened Make sure your butter is soft for easy mixing.
  • 2 large eggs
  • 1 tablespoon fresh lime zest If you like a stronger lime taste, add more lime juice or zest.
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh mint leaves, finely chopped Chop the mint leaves finely for the best flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
Optional Glaze Ingredients
  • 1 cup powdered sugar For glaze, optional.
  • 1-2 tablespoons lime juice For glaze, optional.
  • 1/2 teaspoon rum extract Optional.

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter and sugar in a bowl until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Mix in vanilla extract, lime juice, and lime zest.
  5. Fold in finely chopped mint leaves.
  6. In a separate bowl, whisk together flour, baking powder, and salt.
  7. Gradually combine dry ingredients with wet ingredients until a soft dough forms.
Baking
  1. Scoop tablespoon-sized portions of dough, roll into balls, and place on baking sheet.
  2. Gently flatten each dough ball.
  3. Bake for 10–12 minutes or until edges are lightly golden.
  4. Cool completely on a wire rack.
  5. Optional: Mix powdered sugar with lime juice to create glaze and drizzle over cookies.

Notes

Store the cookies in an airtight container at room temperature. They will stay fresh for about a week. If you want to save them for longer, you can freeze the cookies. Just make sure to wrap them well.
