Preparation
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter and sugar in a bowl until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in vanilla extract, lime juice, and lime zest.
- Fold in finely chopped mint leaves.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gradually combine dry ingredients with wet ingredients until a soft dough forms.
Baking
- Scoop tablespoon-sized portions of dough, roll into balls, and place on baking sheet.
- Gently flatten each dough ball.
- Bake for 10–12 minutes or until edges are lightly golden.
- Cool completely on a wire rack.
- Optional: Mix powdered sugar with lime juice to create glaze and drizzle over cookies.
Notes
Store the cookies in an airtight container at room temperature. They will stay fresh for about a week. If you want to save them for longer, you can freeze the cookies. Just make sure to wrap them well.
