Sparkling Berry Fizz Instructions
- In the bottom of a sturdy glass or a cocktail shaker, muddle the fresh berries, mint leaves, honey, and lime juice. Muddle just enough to release the berry juices and mint oils.
- Fill a tall glass with fresh ice cubes.
- Strain the muddled mixture over the ice.
- Top the glass with chilled sparkling water and ginger beer.
- Gently stir to combine.
- Garnish with extra berries and a mint sprig.
Tropical Mint Punch Instructions
- In a pitcher or a large glass, combine the chilled pineapple juice, coconut water, orange juice, and lemon juice. Stir well.
- Taste and add simple syrup if you prefer a sweeter drink.
- Lightly clap the mint leaves between your hands to release their aroma and add them to the mixture. Stir gently.
- Fill two glasses with ice and pour the tropical mixture over the top.
- Add a small splash of soda water to each glass for extra fizz if desired.
- Garnish each glass with a pineapple wedge and a fresh mint sprig.
Notes
This mocktail is best enjoyed fresh. You can prepare the muddled berry base ahead of time and store it in the refrigerator for up to 4 hours. The juice mixture for the Tropical Punch can be stored in a sealed pitcher for up to 24 hours.
