Ingredients
  

Sparkling Berry Fizz Ingredients
  • 1 cup mixed fresh berries (strawberries, raspberries, blueberries)
  • 10-12 leaves fresh mint leaves
  • 1 tablespoon honey or agave syrup
  • Juice of 1 lime
  • 1 cup chilled sparkling water
  • ½ cup chilled ginger beer
  • Extra berries and mint sprigs for garnish
  • Ice cubes
Tropical Mint Punch Ingredients
  • 1 cup pineapple juice chilled
  • ½ cup coconut water chilled
  • Juice of 1 orange
  • Juice of ½ a lemon
  • 1-2 teaspoons simple syrup (optional, to taste)
  • 6-8 leaves fresh mint leaves
  • Ice cubes
  • Splash of soda water (optional)
  • 1 wedge pineapple for garnish
  • 1 sprig mint for garnish

Method
 

Sparkling Berry Fizz Instructions
  1. In the bottom of a sturdy glass or a cocktail shaker, muddle the fresh berries, mint leaves, honey, and lime juice. Muddle just enough to release the berry juices and mint oils.
  2. Fill a tall glass with fresh ice cubes.
  3. Strain the muddled mixture over the ice.
  4. Top the glass with chilled sparkling water and ginger beer.
  5. Gently stir to combine.
  6. Garnish with extra berries and a mint sprig.
Tropical Mint Punch Instructions
  1. In a pitcher or a large glass, combine the chilled pineapple juice, coconut water, orange juice, and lemon juice. Stir well.
  2. Taste and add simple syrup if you prefer a sweeter drink.
  3. Lightly clap the mint leaves between your hands to release their aroma and add them to the mixture. Stir gently.
  4. Fill two glasses with ice and pour the tropical mixture over the top.
  5. Add a small splash of soda water to each glass for extra fizz if desired.
  6. Garnish each glass with a pineapple wedge and a fresh mint sprig.

Notes

This mocktail is best enjoyed fresh. You can prepare the muddled berry base ahead of time and store it in the refrigerator for up to 4 hours. The juice mixture for the Tropical Punch can be stored in a sealed pitcher for up to 24 hours.
