  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/4 cup cold butter, cubed Ensure butter is very cold for fluffy scones.
  • 1/2 cup milk Can be substituted with almond milk or other plant-based milk.
  • 1 large egg
  • 1 teaspoon peppermint extract Finely chopped fresh mint can be used as an alternative.
Mix-ins
  • 1/2 cup mint chocolate chips Experiment with different types of chocolate chips for variety.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together milk, egg, and peppermint extract.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Fold in the mint chocolate chips.
Baking
  1. Turn the dough onto a floured surface and knead gently.
  2. Roll out to about 1-inch thick and cut into triangles or use a round cutter.
  3. Place on a baking sheet lined with parchment paper.
  4. Bake for 15-18 minutes or until golden brown.

Notes

Store any leftover scones in an airtight container at room temperature for up to three days. If you want to keep them longer, you can freeze them. To reheat, simply warm them in the oven at a low temperature until warmed through. Serve with clotted cream or a drizzle of chocolate sauce.
