  • 8 oz pasta (any shape) Use your favorite pasta shape.
  • 2 cups sweet corn (fresh or canned) If using canned, drain it well.
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup crumbled queso fresco (or feta cheese) Feta can be used as a substitute.
  • 1/4 cup chopped cilantro Can substitute with parsley if preferred.
  • 1 teaspoon chili powder
  • 1 teaspoon lime juice Freshly squeezed is recommended.
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and let it cool.
  2. In a large bowl, combine cooked pasta, sweet corn, mayonnaise, sour cream, queso fresco, cilantro, chili powder, lime juice, salt, and pepper.
  3. Mix well until all ingredients are combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best served cold. You can garnish it with extra cilantro or lime wedges. It pairs well with grilled meats or can be enjoyed as a main dish itself. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
