Ingredients
  

For the patties
  • 1 can chickpeas, drained and rinsed Make sure to rinse well to remove any canning liquid.
  • 1/2 cup breadcrumbs Add more if mixture is too wet.
  • 1/4 cup fresh parsley, chopped Use fresh herbs for the best flavor.
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Oil for frying Heat oil over medium heat.
For the yogurt sauce
  • 1 cup plain yogurt Can substitute with dairy-free yogurt.
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill or mint, chopped

Method
 

Preparation
  1. In a bowl, mash the chickpeas with a fork until mostly smooth.
  2. Add breadcrumbs, parsley, red onion, garlic, lemon zest, lemon juice, cumin, salt, and pepper. Mix well until combined.
  3. Form mixture into patties.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Fry the patties for 3-4 minutes on each side until golden brown.
Yogurt Sauce
  1. In a small bowl, mix yogurt, lemon juice, and dill or mint.

Notes

Store leftover patties in an airtight container in the fridge for up to 3 days. You can serve these patties on a salad or in pita bread with veggies.
