Low Carb Cheesy Garlic Chicken Wraps

Ingredients
  

For the filling
  • 2 cups cooked chicken breast (shredded, or use rotisserie chicken) You can use leftover or rotisserie chicken for convenience.
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened) Make sure it's softened for easy mixing.
  • 1 tablespoon olive oil For cooking the wraps.
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped) For flavor and garnish.
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional) Add for extra nutrition.

Method
 

Cooking the wraps
  1. Preheat a skillet or grill pan over medium heat and add olive oil.
  2. Warm your tortillas for 10-15 seconds in the microwave covered with a damp paper towel to prevent cracking.
  3. In a mixing bowl, combine shredded chicken, mozzarella cheese, cheddar cheese, cream cheese, minced garlic, parsley, salt, and pepper. If using spinach, add it now. Mix thoroughly.
  4. Divide the chicken mixture evenly among the four tortillas, placing about 1/2 cup in the center of each.
  5. Roll each tortilla tightly, tucking in the sides to form secure wraps.
  6. Place the wraps seam-side down in the preheated skillet and cook for 2-3 minutes per side until golden brown and cheese is melted.
  7. Remove from skillet, slice each wrap in half diagonally, and serve hot. Garnish with extra parsley if desired.

Notes

Tip: Warm the tortillas briefly to prevent cracking. Use rotisserie chicken for fast prep. Don't overfill the tortillas. Press seam-side down in the skillet to seal the wrap and get a nice crust.
