Ingredients
  

Crispy Roasted Potatoes
  • 4 medium medium potatoes Can use regular or sweet potatoes.
Seasoned Taco Meat
  • 1 lb ground beef or turkey Choose based on preference.
Toppings
  • 1 cup cheddar cheese, shredded Can substitute with other cheese like pepper jack.
  • 1 cup pico de gallo Use store-bought or homemade.
  • 1 cup sweet corn Fresh or canned corn can be used.
  • 1/2 cup guacamole Store-bought or homemade.
  • 1/4 cup taco sauce Adjust quantity to taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized pieces, then roast them in the oven until crispy, about 25-30 minutes.
Cooking
  1. In a skillet, cook the seasoned taco meat (ground beef or turkey) over medium heat until browned.
Assembly
  1. In a bowl, layer the crispy potatoes with taco meat, shredded cheddar cheese, pico de gallo, sweet corn, and guacamole.
  2. Drizzle with taco sauce and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or oven before serving.
