Loaded Potato Taco Bowl

Ingredients
  

For the Roasted Potatoes
  • 2 pounds russet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
For the Taco Filling
  • 1 pound ground beef (or ground turkey)
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • ½ cup tomato sauce
  • ¼ cup water
For Toppings
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 whole avocado, sliced
  • ½ cup sour cream
  • ¼ cup chopped cilantro
  • ¼ cup sliced green onions
  • jalapeño slices to taste
  • corn kernels to taste
  • black beans to taste
  • hot sauce to taste
  • lime wedges for serving

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. In a bowl, mix diced potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
Cooking
  1. While the potatoes cook, heat 1 tablespoon of olive oil in a pan over medium heat.
  2. Cook the ground beef until browned.
  3. Add taco seasoning, tomato sauce, and water to the beef, stirring well.
  4. Let it simmer for about 5 minutes.
Assembly
  1. Once the potatoes are done, combine them with the taco meat in bowls.
  2. Top with shredded cheese, lettuce, tomatoes, avocado, sour cream, cilantro, green onions, jalapeños, corn, black beans, hot sauce, and lime wedges.
  3. Serve immediately and enjoy!

Notes

You can use sweet potatoes for a different flavor. Add more spices for extra heat. Try using different kinds of cheese for variety.
