Preparation
- Preheat the oven to 425°F.
- In a bowl, mix diced potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread the potatoes on a baking sheet and roast for 25-30 minutes, or until golden and crispy.
Cooking
- While the potatoes cook, heat 1 tablespoon of olive oil in a pan over medium heat.
- Cook the ground beef until browned.
- Add taco seasoning, tomato sauce, and water to the beef, stirring well.
- Let it simmer for about 5 minutes.
Assembly
- Once the potatoes are done, combine them with the taco meat in bowls.
- Top with shredded cheese, lettuce, tomatoes, avocado, sour cream, cilantro, green onions, jalapeños, corn, black beans, hot sauce, and lime wedges.
- Serve immediately and enjoy!
Notes
You can use sweet potatoes for a different flavor. Add more spices for extra heat. Try using different kinds of cheese for variety.
