  • 1 cup rolled oats Use rolled oats for better texture.
  • 1/2 cup almond butter or peanut butter Choose your preferred nut butter.
  • 1/3 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1/4 cup lemon juice Freshly squeezed lemon juice is best.
  • 1 teaspoon vanilla extract
  • zest of 1 lemon Add more zest for extra flavor.
  • a pinch salt

Method
 

Preparation
  1. In a mixing bowl, combine the oats, nut butter, honey, lemon juice, vanilla extract, lemon zest, and salt.
  2. Mix well until all ingredients are combined into a sticky mixture.
  3. Scoop out small portions and roll them into balls or flatten them into cookie shapes.
  4. Place the cookies on a parchment-lined tray and refrigerate for at least 30 minutes to set.

Notes

Serve these chilled or at room temperature. They pair well with tea, iced coffee, or milk. Store in a sealed container in the fridge for up to 1 week or freeze for up to 1 month. Thaw in the fridge before serving.
